White, dark, or both. Quartered, then brined with fresh herbs and spices, rubbed with freshly ground spices, olive oil, and butter, served with a roasted turkey gravy.
Roasted Beef
Choice of beef cut rubbed with freshly ground spices and slow roasted, served with our homemade Au Jus and fresh horseradish cream.
Beef Wellington
Filet of beef butterflied, then stuffed with mushroom and shallot duxelle, with breading, then rolled with puff pastry and baked.
Roasted Ham (uncured)
Brined ham with fruits, herbs, and sweet spices smoked with applewood and glazed with our apple honey butter glaze.
Roasted Chicken (whole)
Brined and slow roasted with fresh herbs and spices. Served with our silky bone broth sauce.

Tourtière en croute
Braised beef, portobello, shallots in puff pastry paired with pickled beet and corn hash, sweet potato mash.
Cornish Roast
Quartered hens, pumpkin seed and sage rice pilaf, butternut apple hash, wildflower honey and herbed soda bread.
Turkey Roulade (stuffed)
Homemade stuffing, fresh herbs, homemade sausage, field greens, cranberry, wrapped in bacon served with country potato mash and rasin white balsamic brussel sprouts.
Prime Rib Dip
House fresh spice rub, roasted to 120f with a beautiful crust, sliced and dipped to order in simmering house au jus and fresh horseradish sour cream.

Stuffed with smoked apples, rosemary, sage, homemade stuffing, craisins and pan reduction.

Short Rib Ragu
Braised short ribs with fresh herbs and roma tomatoes served with Parpadelle pasta. Rustic Italian bread with garlic and rosemary infused olive oil and fresh ground pepper dip. Gorgonzola antipasto salad with field greens and radicchio.
